How to make pancakes using 2 ingredients

The only ingredients you need!

Mash your ripe banana - the riper the better. Whisk eggs and add to your mashed banana. To save on washing, I whisked the eggs to the side of the banana then mixed them together.

The mixed banana and eggs should look like this

Grease your pan with a non-stick spray or a teaspoon of coconut oil (just enough to lightly coat the base of the pan). Pour or scoop a small amount of mixture into the pan. Turn after a minute.

I pour in batter just a little bigger than the palm of my hand and get 5 pancakes out of this mixture. Make to your preferred size.

When cooked, eat as they are, with a little maple syrup or top with your favourite pancake topping. Today I have used a delicious rhubarb & raspberry compote which works a treat.
